the pressing process, racking of the must and casking...
wine-making is the result of ancestral processes, patiently repeated,
of ancient techniques perpetuated as if in a rite.
And yet, human intuition and complicity, especially at
the moment of de-casking
and blending cannot be replaced by any technique.
Nor can the daily wine-tasting
throughout its storage in casks : 9 months for white wines, from 12 to 18 months for reds.
